Hi, I have build several IoT boards including on board antenna Before. for your case, I prefer using LoRa for Radio Transciever side. with this we can achieve very long range communication. on third devices ( WiFi datalogger, I prefer using ESP32). But it's all depends on you. if you already defined the technology, I will following your preference. I have 9 years experience as hardware and firmware developer. So whenever I design the hardware I always looking for it's firmware side, wether it's possible on firmware or not. I have working on various projects, from hobbyist to Military grade projects. This is my daily activities. I will use either Eagle or Kicad as my EDA tools. I guess 2 layer boards is enough. We have a similar development - a sensor hub. The first module measures temperature, humidity and additional parameters. Sends them over the LORA network to the hub.
