Karenderia Multiple Restaurant System customisation

iam going to make a new website an will buy karenderia multiple restaurant, mobile application and merchant application,,

my site will be for home food where any one can cook a food and sell it at website so i want some modification for the script,

1) for operating hours a i want to add another option where merchant is opened or closed depending on if he signed in to merchant app or website or not .

2) for adding items on menu , i want to add new field (stock) where merchant can set number of meals for each item and if not available it goes to pending

3) i want to make the default search result is the map and add different marker to the merchant depending on if it is opened or closed

4) i want to add the map search also to the mobile application.

5) i want to add some filters in search results

6)at search result page in the map when i click on any restaurant some pop up message about the restaurant appear , i want to edit this message and add some fileds in it such that when i search with specific food so this message include the restaurant name , location and the price of the searched food item.
