Shopify Store Web Speed Optimisation

Optimise both Desktop and Mobile page load speeds for my Shopify store.
The faster the better of course, but a significant reduction in load times for both formats while still maintaining good image quality would be great.
For me, the benchmark is 'Load Time' using [login to view URL]'s benchmark with the following parameters:

Dulles, VA USA (Desktop, Android, iOS)
Galaxy S7 - Chrome
3 Tests
3G Fast
First View Only
This is currently sitting at ~6.3 seconds and I'd ideally like it to be under 3 seconds, 2.5 would be even better.
I know that there are some restrictions with what you can change with Shopify, but let me know what you think we can achieve!
Please answer the following questions in your proposal message:
- Do you use any Shopify Apps during your optimisation work? If so, what are they?
- What is your approach to optimising image file sizes on Shopify stores?
