Drupal Website Maintenance

I am well-versed in Drupal site maintenance and have been working with Drupal full-time for the past two years. I am based in the US for easy communication. There isn't a lot of information about what type of maintenance you're needing but normally for updating a site I prefer to do that in the off hours. Do you know what times your site is least used? Also, would I be doing maintenance on the server-side using drush with access to files or through the site interface? I prefer drush on the server side for better troubleshooting when things don't go as planned but I can work with the interface as well. Lastly, what sort of backup system and/or development environment do you have in-place? It's very risky to do updates on a live site without testing them on a staging server beforehand. Do you have a setup for this?
